Homemade Rhino Fries

One of my favorite things to do is go out to eat.  Since becoming a stay-at-home mom, I find that I enjoy a meal at a restaurant far less than I used to.  Instead, I now try to treat myself to yummy copycat versions of items I order out.  Central PA bar and grill, T.J. Rockwell’s, has the most delicious cheese fries, and I love to enjoy them on their deck on a nice summer evening.  They call them Rhino Fries, and that’s just what I cooked up recently! Easy Protein Packed Dinners

It’s no secret that we go through a lot of meat in our house.  I’m constantly looking for a way to quickly make A LOT of chicken, fish, beef, etc. to keep A1 fueled and fed.  One of my quick tricks is to marinate a protein in a salad dressing and then bake or broil the meat in the marinade.  It packs a lot of flavor with very little effort!  If you’re like me and need a shortcut for your week night meals, here are some ideas for you: Continue reading

Mediterranean Pasta Salad

Central PA salad dressing king, Gazebo Room, recently introduced a few new exciting flavors to their line of products.  They graciously offered me samples of each of the flavors to try in some of my Original Rusniak Recipes!  I’m pleased to share the results with you here and hope you enjoy them as much as we did.

The first flavor I experimented with was the Caesar Vinaigrette.  I was a little reluctant to use this one, as I’m used to my Caesar dressings being creamy in consistency, but this variety was such a pleasant surprise and a perfect addition to pasta salad! Continue reading

Knock-Off Starbucks Spinach & Feta Wrap

One of my favorite treats to order on the go is a Starbucks Spinach & Feta Wrap with egg whites.  It’s a delicious, flavorful, and pretty healthy treat.

Earlier this week I found myself at home with A LOT of spinach that was nearing it’s expiration and was determined to not let it go to waste.  I googled a recipe for the Starbucks Spinach & Feta Wrap and was thrilled to find this recipe.  I of course altered it a bit to our Rusniak taste buds, but the end result was amazing.   Continue reading
