Knock-Off Starbucks Spinach & Feta Wrap

One of my favorite treats to order on the go is a Starbucks Spinach & Feta Wrap with egg whites.  It’s a delicious, flavorful, and pretty healthy treat.

Earlier this week I found myself at home with A LOT of spinach that was nearing it’s expiration and was determined to not let it go to waste.  I googled a recipe for the Starbucks Spinach & Feta Wrap and was thrilled to find this recipe.  I of course altered it a bit to our Rusniak taste buds, but the end result was amazing.  

Greek Inspired Crust-less Quiche (on our Snow Day)

This morning I woke up before my alarm went off – this act is reserved for holidays, weekends, the first day of vacation and any day that I actually have the opportunity to sleep in (irony at its finest, right?).  My mind was racing thinking of the all of the snow that would be accumulating outside of my windows, and I couldn’t wait to confirm that I (and A1 – eeek!!) would be working from home today.
